5 minute vegan treats: date caramel, banana ice cream & choc. chip cookie dough

Who doesn’t love five-minute treats?! Not only are they super fast to make, but they’re also deliciously VEGAN. Yeaaaaaa, be excited.

Also, super stoked to share I have the awesome honor of presenting these babies tomorrow at Central Florida Veg Fest! A special thanks to Bulk Nation Foods for sponsoring me!

Don’t fret it you’re not local to see my demo live though, you can totally nail these on your own.

Date Caramel

serving: 1 cup

– 20 organic pitted dates

– 1/2 + 1/3 cup almond milk

– 1/4 cup maple/agave syrup blend

(I purchase the blend at Trader Joes but you can use one or the other if you only have that on hand – i.e. 1/4 cup of full maple syrup or 1/4 cup agave)

– 1/2 tsp vanilla extract

– 1 tbsp coconut oil

– a pinch of pink Himalayan salt

Add all ingredients into a food processor and blend on high for 3 minutes or until creamy. Seriously, that’s it! Use for caramel chocolate bites, apple dipping and tons of other fun ways!

Banana ice cream

serving: 3 bowls

– 5 organic bananas (frozen over night)

– 1 cup almond milk

– 1 tbsp creamy peanut butter

Combine all ingredients in a vita mix or high-powered blender. Blend until creamy and consistency resembles ice cream. Top with your favorite toppings and enjoy!

Chocolate chip cookie dough

serving: 3 cups

– 1 cup earth balance vegan butter

– 1/2 cup brown sugar

– 1/2 cup cane sugar

– 1 tsp vanilla extract

– 1/2 cup almond milk

– 2 1/2 cups all-purpose flour

– 1/4 tsp pink Himalayan salt

– non dairy chocolate chips

**optional ( 1 tsp of baking powder and baking soda if you actually want to bake it)

In a large mixing bowl, combine butter and sugars. With a fork, mash until it is smooth and creamy. Next add is vanilla extract, milk and salt.  Once combined well, add in flour and mix well until a dough forms.

Pour in desired amount of chocolate chips and it’s ready to eat right from the bowl! I love using chunks of this in my banana ice cream or just eating it straight up.

** If you plan to use the dough for baking, mix in baking soda and powder into the flour before combining it with the other ingredients. Makes about 18-20 cookies depending on how you size them. Bake at 350 degrees for 10-12 minutes.

There you have it! 3 of my favorite 5 minute recipes that are super yummy and crazy easy to make!

Hope you enjoy and shoot me a comment if you decide to give these a try 😊

Til next time,

~ Chantel
